Délicieux Fromage! French appeal – create this velvety afternoon delight from the comfort of your own home!
- 50g butter, plus extra for buttering
- 2 tablespoons plain flour
- ¾ cup (180ml) milk
- 140g grated Swiss cheese (eg Gruyere)
- 8 slices rustic woodfire bread, cut into 1cm thick slices
- 1 tablespoon Dijon mustard
- 4 slices leg ham

Cooking time: 20 minutes
Melt the butter in a medium saucepan over low heat. Stir in the flour and cook for 1-2 minutes without letting the mixture brown.
Add the milk and continue to cook over low heat, stirring continuously for about 4-5 minutes or until thick.
Add half the grated cheese and mix well. Set aside to cool.
Spread butter onto one side of each slice of bread. Spread 4 of those slices with Dijon mustard, place the ham and remaining cheese on top and cover with another bread slice, making sure that the buttered side is on the outside.
Preheat grill on HIGH and line a flat baking tray with baking paper.
Place one sandwich inside sandwich rack and bring the handles together. Close the clip to keep grids together. Insert the Sandwich Rack into the toaster slot.
Toast until golden and crisp and heated through. Repeat with remaining sandwiches.
Spread one side of each toastie with the cheese sauce, and place under the grill; cook until golden and bubbling. Serve immediately.
